Tapioca otherwise known as yuca is a famous food among Keralites which is consumed in different ways boiled,cooked with different spices,with fish,with beef etc..This Kappa curry is one among them which is made in an easy way and can be eaten with rice or by itself.
Ingredients:
Tapioca - 1kg
Coconut grated -1/2 of a coconut
Shallots - 6
Cumin seeds -1/2 tsp
Turmeric powder - 1/4tsp
Green chilli - 1
Mustard seeds - 1tsp
Red chilli -2
Curry leaves -1string
Oil as required
Method:
Peel off the tapioca skin and dice into pieces.Cook with salt,turmeric powder and enough water.Grind together coconut grated,shallots,cumin seeds and green chilli to a fine paste.When tapioca is almost done,add the ground masala and cook for some more time.Remove from fire.
Heat oil in a small pan add musturd seeds,curry leaves .When it splutter add. red chillies.Pour this over the kappa curry and serve.
