Cucumber - 2( large )
Ginger - 1 small piece
Mint leaves - 1/4 cup chopped
Sugar - 3/4 cup
.Heat a vessel containing sugar and one cup water till the sugar dissolves fully in water .Allow it to cool.
.Crush the ginger piece and blend it with a quarter cup water in a blender.Strain it through a strainer.
.Peel the cucumber skin,de-seed it and blend it with chopped mint leaves to a puree.To this add the sugar syrup we prepared earlier and 2 cups of water.Blend it again.Strain this through a strainer.Mix the ginger juice to this and serve.
During summer, we can chill it and serve.
