Onion -3 sliced finely
Ginger -1 piece
Curry leaves -a few
Red chilli powder -1 tsp
Pepper powder -2tsp
Garam masala -1 tsp
Turmeric powder -1/4 tsp
Fennel powder -1tsp
Hard boil the eggs,peel and keep aside.
Make a paste of masala ingredients by adding a little water.
Make small slits in the egg by running knife and marinate with quarter part of masala made.
In a heavy bottom pan,pour some oil and fry this marinated egg pieces for less than one minute and keep them aside.Now in the same pan,to the left over oil(which is used for frying)add the sliced onions and saute till it becomes brown in color.Now add the remaining masala paste and curry leaves to this .Saute it till it becomes half the quantity .Now we can add the fried egg pieces.Serve hot with appam ,chappathi, idiyappam or puttu.
